西班牙名莊- Dominio De Pingus酒莊

Dominio De Pingus早已是人人趨之若鶩的cult wine ,憑酒莊的名氣,Peter Sisseck大可在附近找多幾塊田,用大量年輕有生產力的葡萄藤打造一個入門品牌,不愁沒人買。不過他卻選擇了給葡萄農誘因放棄大規模生產低質年輕葡萄,轉用生物動力學和有機方法種植低產量的老藤。種出來的葡萄就用來造了這支PSI(Ψ)。Peter上次來香港的時候我喝過2010的,今次的2013感覺比之前更加扎實更複雜。Flor de Pingus 2003 正值高峯非常適飲;2007則更濃厚更有陳年潛力。不用多説旗艦Pingus 2012 充份發揮老藤本色,單寧緊緻,果味豐厚。

 

Happy to meet Peter Sisseck again in Hong Kong. I didn’t respect him for creating Pingus, one of the most iconic garage wine in Spain, I respect him for his motive associated with his PSI(Ψ) wine. It was such an incredible idea to convert those grape growers from quantity to quaity, promote the organic and biodynamic farming, saving the old vines and produce outstanding wines at the same time. Both growers and drinkers better-off, thank you Peter
