The Die is cast ，意思是事情一但發生了，便成定局，不可逆轉。
出自兩千年前凱撒大帝決定渡Rubicon河，背城借一要與羅馬共和國開戰的事蹟。
和MEERLUST ESTATE 的先祖Nico Myburgh 當年在南非Stellenbosch 做Bordeaux Blend一樣,
所以Meerlust的旗艦酒就以命名。
Cellar Master Chris Williams秉承著家族精神Wine Maker 繼續「有前冇後，打死罷就」地創新，
例如混合更多Cabernet Franc 和加入Petite Verdot 提升味道。
今天試飲有幸試到1991年的Meerlot Rubicon 果香依然新鮮，有一點乾果味道。
但本人這喜歡的是Chris接手後的作品2005 年。果味豐盈，果和酸的平衡像轉動的坨螺般，單寧十分柔和，木桶運用得非常出色，帶淡淡的香草味。
“Alea iacta est. The die is cast” is a quote from Julius Caesar which described the decision he made to cross the Rubicon River , marked an irrevocable point in history.
Meerlust’s flagship wine named Rubicon because of Nico’s will to make a Bordeaux blend in South Africa, like Caesar, there could be no turning back.
Cellarmaster Chris Williams never stop rushing forward, making their own blend instead of the Bordeaux blend:
Adding more Cabernet Franc and also Petit Verdot.
It was a pleasure tasting the Meerlust’s wines with the Chis Williams, Meerlust Rubicon 1991 was nice but the 2005 was so impressive, silky tannin, floral nose, intense yet gentle fruit made this wine very elegant.
