來自Chablis大家族 Laroche Family的Benjamin Laroche,決定在沒有自家葡萄田的情況下建立La Manufacture 這個品牌。我的正職告訴我,品牌外判生產或服務絕對不比自家製作差,只要有清晰的指引和品質管理,成本和質素是可以控制得很好的。

試Chablis很簡單,酸度礦物缺不可。這莊的Chablis酸夠爽,礦物圓滑,大量西柚,石榴和青檸之果味。

Chablis 在Premier Cru (1er) 或以上很多時都會用小量的木桶,酸會圓潤一點,好像 1er Cru Beauroy 和 Grand Cru Blanchot,酸較柔和,多了一點點烤果仁的味道。

不過我更喜歡 1er Cru Côte de Léchet和Grand Cru Les Clos,酸度圓滑但依然強勁,而且還襯托起礦物味和一點點的白花味。

Benjamin Laroche from the Laroche family of Chablis decided to make his own brand of Chablis with a selection of passionate winemakers who makes his Chablis.

In order to maintain the wine quality, Benjamin is constantly looking for outstanding gems in the area.

His Chablis has elegant nose od citrus fruit and stone fruits like pears, grapefruit and minerals with its length.

The 1er Cru and Grand Cru wines might have the touch of the oak to make the acid more rounded and enhance its flavor profile, like 1er Cru Beauroy and Grand Cru Blanchot for example.

I prefer more on 1er Cru Côte de Léchet and Grand Cru Les Clos which still have sharp acidity, intense mineral and also the nose of white flowers.
